Ingredients

  • Dutch Baby:
  • 2/3 cup Carnation® Evaporated Milk, Regular, 2% or Fat Free
  • 3 eggs
  • 3/4 cup Robin Hood® Original All Purpose Flour
  • Salt and fresh cracked pepper
  • 3/4 cup grated Parmigiano Reggiano cheese
  • 1/4 cup fresh basil
  • 3 tbsp butter
  • Cherry Tomato Salad:
  • 2 cups cherry tomatoes, sliced
  • 1/4 cup red onion, sliced
  • 2 tbsp olive oil
  • 4 large basil leaves, torn
  • Salt and fresh cracked pepper
  • 1/2 cup feta cheese, crumbled
  • Fresh Basil, garnish, optional

  • Preheat oven to 425°F (220°C). Combine evaporated milk and eggs in blender until well combined. Add next 4 ingredients and mix until combined.
  • Melt butter in 10" (25cm) cast iron pan over medium heat until bubbly. Carefully pour in mixture. Cook 30 seconds. Place in preheated oven and bake until puffed and golden, 15-20 minutes. Meanwhile, combine ingredients for cherry tomato salad. Set aside.
  • Remove pancake from oven. It will slowly deflate. Top with tomato salad and garnish with additional fresh basil if desired. Serve immediately.
  • Tip: top with fresh arugula and baby romaine lettuce dressed with lemon juice and olive oil.
