  • 4 eggs
  • 3 cups Brodie® Self Raising Cake and Pastry Flour
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 1 cup honey
  • 1/2 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1 cup brewed Folgers® Coffee, any type, cooled

  • Preheat oven to 350°F (175°C). Grease a 10 cup (1.5 L) Bundt pan.
  • Beat eggs, sugar, oil and honey together in large bowl of electric mixer, about 2 minutes. Combine flour and spices in small bowl. Add 1/3 of flour mixture to wet ingredients alternatively with 1/3 coffee, beating well after each addition.
  • Pour into prepared pan. Bake in preheated oven 50-55 minutes or until a toothpick inserted comes out clean. Let cool 10 minutes in pan and invert on cooling rack.
  • This cake is best made a day ahead to let flavours mingle.
